Ingredients

  • 1 pound elbow macaroni
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 1 cup gouda cheese, shredded
  • 1/2 cup parmesan cheese, grated
  • 4 ounces cream cheese
  • 2 1/2 cups whole milk
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika


Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish.
  2. Bring a large pot of salted water to a boil. Cook the macaroni until just al dente, then drain and set aside.
  3. In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1–2 minutes.
  4. Gradually add the milk, whisking constantly until the sauce thickens.
  5. Reduce heat to low and stir in the cream cheese until melted, then add cheddar, mozzarella, gouda, and half the parmesan. Stir until smooth.
  6. Add salt, black pepper, garlic powder, and paprika. Mix well.
  7. Combine the pasta with the cheese sauce and transfer to the prepared baking dish.
  8. Top with the remaining parmesan cheese.
  9. Bake uncovered for 20–25 minutes until bubbly and golden on top.
  10. Optional: Broil for 2–3 minutes for a crispier top. Let rest 5–10 minutes before serving.
