- 12 ounces fettuccine
- 5 cloves garlic, finely minced
- 6 tablespoons unsalted butter
- 1/2 cup grated parmesan cheese
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon lemon juice
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper
- 1/4 cup reserved pasta water
Instructions
- Bring a large pot of salted water to a boil. Cook the fettuccine until al dente, then reserve 1/4 cup of the pasta water and drain.
- In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté gently until fragrant and golden, about 2-3 minutes.
- Add the drained pasta to the skillet and toss to coat in the garlic butter.
- Pour in the reserved pasta water gradually while tossing, allowing the sauce to cling to the noodles and thicken slightly.
- Stir in the parmesan cheese, lemon juice, chopped parsley, salt, and pepper. Mix until the cheese melts and everything is well combined.
- Serve immediately, garnished with extra parsley and parmesan if desired.
Notes
- Don’t let the garlic brown too much or it may turn bitter.
- Use fresh lemon juice for a cleaner, brighter flavor.
- Save more pasta water in case you want to adjust the sauce texture.
- Garnish with red pepper flakes if you like a little heat.
