Description

These Easy Weeknight Meatball Subs are a quick and comforting dinner, packed with juicy homemade meatballs, marinara sauce, and melted mozzarella, all served on soft buns. Perfect for busy weeknights when you want a satisfying, hearty meal.

For the Meatballs

  • 1 pound ground beef (95% lean)
  • 1/2 cup panko breadcrumbs
  • 1 large egg
  • 12 garlic cloves, minced
  • 1 tablespoon Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon salt

For the Subs

  • 24 meatballs, homemade or frozen
  • 2 tablespoons olive oil
  • 2 cups marinara sauce
  • 8 hot dog buns
  • 1 1/2 cups shredded mozzarella cheese


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Make the meatballs: In a bowl, combine ground beef, breadcrumbs, egg, garlic, Italian seasoning, red pepper flakes, and salt. Mix until just combined.
  3. Form mixture into 1-inch meatballs and place on a baking sheet.
  4. Bake meatballs for 15–20 minutes, until cooked through.
  5. While meatballs bake, heat olive oil in a skillet over medium heat and warm the marinara sauce.
  6. Add baked meatballs to the marinara sauce and simmer for 5 minutes.
  7. Slice hot dog buns and place 3 meatballs in each bun. Spoon extra sauce over meatballs.
  8. Top with shredded mozzarella and place under a broiler for 1–2 minutes until cheese melts.
  9. Serve hot and enjoy!

Notes

  • You can substitute ground beef with a mix of beef and pork for more flavor.
  • Use frozen meatballs for a faster meal; just thaw and heat through in the sauce.
  • Add sautéed onions or bell peppers to the sauce for extra flavor.
