- 1 cup cottage cheese
- 1 cup fresh spinach, chopped
- 1 egg
- 1 cup all-purpose flour (or whole wheat flour)
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon garlic powder (optional)
- 1 tablespoon olive oil (for brushing)
- Sesame seeds or everything bagel seasoning (optional, for topping)
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a bowl, combine cottage cheese, chopped spinach, and egg. Mix well.
- In a separate bowl, whisk together flour, baking powder, salt, and garlic powder (if using).
- Add dry ingredients to wet ingredients and stir until a sticky dough forms.
- Divide dough into 4 equal portions. Flatten each portion into a round disc and poke a hole in the center to form a flagel shape.
- Place on prepared baking sheet. Brush tops with olive oil and sprinkle with sesame seeds or seasoning if desired.
- Bake for 20–25 minutes, or until golden brown and cooked through.
- Let cool slightly before serving. Enjoy warm or toasted!
Notes
- Use frozen spinach (thawed and squeezed dry) if fresh is unavailable.
- Substitute cottage cheese with Greek yogurt for a different texture.
- Store leftovers in the fridge and reheat in a toaster for best texture.
