Ingredients

  • 1 cup fresh spinach, chopped
  • 1 egg
  • 1 cup all-purpose flour (or whole wheat flour)
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon garlic powder (optional)
  • 1 tablespoon olive oil (for brushing)
  • Sesame seeds or everything bagel seasoning (optional, for topping)

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine cottage cheese, chopped spinach, and egg. Mix well.
  3. In a separate bowl, whisk together flour, baking powder, salt, and garlic powder (if using).
  4. Add dry ingredients to wet ingredients and stir until a sticky dough forms.
  5. Divide dough into 4 equal portions. Flatten each portion into a round disc and poke a hole in the center to form a flagel shape.
  6. Place on prepared baking sheet. Brush tops with olive oil and sprinkle with sesame seeds or seasoning if desired.
  7. Bake for 20–25 minutes, or until golden brown and cooked through.
