For the sausage rolls:
- 350 g (12 oz) sausagemeat
- 1 egg, for brushing
- 1 tsp dried sage
- 1 tsp dried thyme
- Salt and freshly ground black pepper, to taste
- 320 g (11 oz) rolled sheet of puff pastry
Instructions
- Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
- In a bowl, combine the sausagemeat with dried sage, dried thyme, salt, and pepper.
- Roll out the puff pastry sheet on a lightly floured surface.
- Place the seasoned sausagemeat along the center of the pastry.
- Fold the pastry over the meat and press the edges to seal. Cut into desired roll sizes.
- Place the sausage rolls on the prepared baking sheet, seam-side down.
- Brush the tops with beaten egg for a golden finish.
- Bake for 20–25 minutes, or until the pastry is golden and cooked through.
- Allow to cool slightly before serving.
Notes
- Use pork, beef, or mixed sausagemeat according to preference.
- Additional herbs like rosemary or parsley can be added for extra flavor.
- Sausage rolls can be frozen before baking; bake directly from frozen, adding a few extra minutes.
- Serve with mustard or ketchup for dipping.
