- 1¾ cups all-purpose flour
- 2 cups granulated sugar
- ¾ cup unsweetened cocoa powder
- 1½ teaspoons baking powder
- 1½ teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup buttermilk
- ½ cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup hot coffee
- 1½ cups dark chocolate chips
- 1 cup heavy cream
- 2 tablespoons unsalted butter
- ½ cup shelled pistachios, chopped
Instructions
- Preheat oven to 350°F (175°C). Grease and line a 9-inch round cake pan.
- In a large bowl, whisk flour, sugar, cocoa, baking powder, baking soda, and salt.
- In another bowl, beat eggs, buttermilk, oil, and vanilla. Mix into the dry ingredients.
- Stir in hot coffee until batter is smooth.
- Pour into prepared pan and smooth the top.
- Bake for 30–35 minutes, or until a toothpick comes out clean. Cool for 10 minutes, then transfer to a rack.
- For the ganache, heat cream until simmering. Pour over chocolate chips. Let sit for 1 minute, then stir in butter until smooth.
- Pour ganache over the cooled cake and spread evenly.
- Top with chopped pistachios. Let set before slicing and serving.
