- 1 cup brown sugar
- 1/4 cup cornstarch
- 1/2 tsp salt
- 2 cups whole milk
- 3 large egg yolks, beaten
- 2 tbsp unsalted butter
- 1 tsp vanilla extract
- Optional topping: whipped cream or meringue
Instructions
- In a medium saucepan, combine brown sugar, cornstarch, and salt. Gradually whisk in milk over medium heat.
- Cook and stir constantly until the mixture thickens and begins to bubble.
- Temper the egg yolks by adding a little of the hot mixture to them, whisking constantly, then return the egg mixture to the saucepan.
- Cook for 2–3 more minutes, stirring constantly, until thick and smooth.
- Remove from heat and stir in butter and vanilla extract until fully incorporated.
- Pour the custard into the pre-baked pie shell and smooth the top.
- Allow to cool slightly, then chill in the refrigerator for at least 4 hours or until set.
- Top with whipped cream or meringue before serving, if desired.
Notes
- Use dark brown sugar for a deeper butterscotch flavor.
- To avoid a soggy crust, ensure the pie shell is fully baked and cooled before filling.
- Can be made a day in advance and kept refrigerated.
