  • 1 cup brown sugar
  • 1/4 cup cornstarch
  • 1/2 tsp salt
  • 2 cups whole milk
  • 3 large egg yolks, beaten
  • 2 tbsp unsalted butter
  • 1 tsp vanilla extract
  • Optional topping: whipped cream or meringue

Instructions

  1. In a medium saucepan, combine brown sugar, cornstarch, and salt. Gradually whisk in milk over medium heat.
  2. Cook and stir constantly until the mixture thickens and begins to bubble.
  3. Temper the egg yolks by adding a little of the hot mixture to them, whisking constantly, then return the egg mixture to the saucepan.
  4. Cook for 2–3 more minutes, stirring constantly, until thick and smooth.
  5. Remove from heat and stir in butter and vanilla extract until fully incorporated.
  6. Pour the custard into the pre-baked pie shell and smooth the top.
  7. Allow to cool slightly, then chill in the refrigerator for at least 4 hours or until set.
  8. Top with whipped cream or meringue before serving, if desired.

  • To avoid a soggy crust, ensure the pie shell is fully baked and cooled before filling.
