- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1/4 tsp salt
- 3/4 cup raspberry preserves
- 1 cup dark chocolate chips
- 1/2 cup heavy cream
- Fresh raspberries (optional, for garnish)
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Add flour and salt, mixing until a crumbly dough forms.
- Press dough evenly into the bottom of the prepared pan. Bake for 18–20 minutes or until lightly golden. Let cool slightly.
- Spread raspberry preserves evenly over the crust while it’s still warm.
- In a saucepan, heat heavy cream until just simmering. Pour over dark chocolate chips and let sit 2 minutes, then stir until smooth.
- Pour chocolate ganache over the raspberry layer and spread evenly. Chill for at least 1 hour until set.
- Slice into bars and garnish with fresh raspberries if desired.
Notes
- Use seedless raspberry preserves for a smoother texture.
- Chill bars completely before slicing for clean edges.
- Store in an airtight container in the fridge for up to 5 days.
