Description

A rich, moist dark chocolate cake enhanced with the bold flavor of non-alcoholic Guinness, topped with a silky ganache. Perfect for celebrations or cozy nights in.


Ingredients

  • 1 cup all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking soda
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/2 cup (1 stick) unsalted butter, melted
  • 6 ounces dark chocolate, chopped
  • 1 cup non-alcoholic Guinness
  • 2 teaspoons vanilla extract
  • 1 cup powdered sugar (for dusting or sweetening ganache)
  • 1/2 cup heavy cream


Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
  2. In a large bowl, whisk together flour, cocoa powder, baking soda, and sugar.
  3. In a separate bowl, beat eggs. Mix in sour cream, melted butter, Guinness, and vanilla extract.
  4. Gradually fold the wet mixture into the dry ingredients until just combined.
  5. Pour the batter into the prepared cake pan and smooth the top.
  6. Bake for 35–40 minutes or until a toothpick inserted in the center comes out mostly clean.
  7. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. For the ganache, melt the chopped dark chocolate and heavy cream in a small saucepan over low heat, stirring until smooth.
  9. Pour ganache over the cooled cake. Let it set before slicing and serving.
  10. Dust with powdered sugar or garnish with berries, if desired.

  • Don’t overmix once flour is added to keep the crumb tender.
