Description

Ingredients

  • 1 cup All-Purpose Flour
  • 1 cup Granulated Sugar
  • 1/2 cup Unsweetened Cocoa Powder
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 1/2 cup Buttermilk
  • 1/2 cup Vegetable Oil
  • 1 large Egg
  • 1 tsp Vanilla Extract
  • 1/2 cup Hot Water
  • 1/2 cup Creamy Peanut Butter
  • 1/2 cup Unsalted Butter, softened
  • 1 1/2 cups Powdered Sugar
  • 2 to 3 tbsp Milk
  • Pinch of Salt


Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with 12 cupcake liners.
  2. In a large bowl, whisk flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, mix buttermilk, oil, egg, and vanilla extract.
  4. Combine wet ingredients into dry, then stir in hot water until smooth.
  5. Pour batter into cupcake liners, filling each about 2/3 full.
  6. Bake for 18 to 22 minutes, until a toothpick comes out clean.
  7. Cool in tin for 5 minutes, then transfer to a wire rack.
  8. For frosting, beat butter and peanut butter until fluffy.
  9. Gradually add powdered sugar, milk, and a pinch of salt. Mix until creamy.
  10. Frost cooled cupcakes and serve.
