- 1 egg
- ½ cup maple syrup
- 2 teaspoons vanilla extract
- 2 cups rolled oats
- 3 tablespoons ground flax
- ⅓ cup brewers yeast
- 1 teaspoon baking powder
- ¼ teaspoon salt
- ½ cup dairy-free chocolate chips
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix almond butter, egg, maple syrup, and vanilla extract until smooth.
- In a separate bowl, combine rolled oats, ground flax, brewers yeast, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until well combined.
- Fold in the dairy-free chocolate chips.
- Using a spoon or cookie scoop, place cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until cookies are lightly golden on the edges.
- Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- Brewers yeast supports lactation, but adjust the amount if needed based on taste preference.
- Almond butter can be substituted with other nut or seed butters if desired.
- Cookies can be stored in an airtight container at room temperature for up to 5 days.
