- 1 pound ground beef
- 2 cups shredded cheddar cheese
- 8 small corn tortillas
- 1 cup shredded lettuce
- 1 ripe avocado, sliced
- 2 medium tomatoes, diced
- ½ cup sour cream
- 1 jalapeño, sliced (optional)
- 1 packet taco seasoning
- Lime wedges, for serving
Instructions
- Heat a skillet over medium-high heat. Brown the ground beef, breaking it apart with a spatula. Cook until no pink remains, then drain excess grease.
- Add taco seasoning and a splash of water to the beef. Stir and simmer for 2–3 minutes until thickened.
- Wipe the skillet clean and return to medium heat. Lightly oil if needed.
- Sprinkle a layer of shredded cheese onto the hot skillet in a circle. Let it melt and sizzle.
- Place a tortilla on top of the cheese. Add a spoonful of beef to one side. Once cheese is golden and crispy, fold the tortilla over and press gently.
- Cook each side until crispy, then transfer to a plate.
- Top with shredded lettuce, diced tomatoes, avocado, sour cream, jalapeños, and a squeeze of lime.
- Serve immediately while hot and crunchy.
