Description

Crispy Cheese Beef Tacos are the ultimate fusion of melty cheddar and juicy seasoned beef, wrapped in a golden cheese-crusted tortilla. Topped with fresh veggies, creamy avocado, and a dollop of sour cream, these tacos deliver big flavor and texture in every bite.

Ingredients

Scale
  • 1 pound ground beef
  • 2 cups shredded cheddar cheese
  • 8 small corn tortillas
  • 1 cup shredded lettuce
  • 1 ripe avocado, sliced
  • 2 medium tomatoes, diced
  • ½ cup sour cream
  • 1 jalapeño, sliced (optional)
  • 1 packet taco seasoning
  • Lime wedges, for serving

Instructions

  1. Heat a skillet over medium-high heat. Brown the ground beef, breaking it apart with a spatula. Cook until no pink remains, then drain excess grease.
  2. Add taco seasoning and a splash of water to the beef. Stir and simmer for 2–3 minutes until thickened.
  3. Wipe the skillet clean and return to medium heat. Lightly oil if needed.
  4. Sprinkle a layer of shredded cheese onto the hot skillet in a circle. Let it melt and sizzle.
  5. Place a tortilla on top of the cheese. Add a spoonful of beef to one side. Once cheese is golden and crispy, fold the tortilla over and press gently.
  6. Cook each side until crispy, then transfer to a plate.
  7. Top with shredded lettuce, diced tomatoes, avocado, sour cream, jalapeños, and a squeeze of lime.
  8. Serve immediately while hot and crunchy.

Notes

  • Shred your own cheese for best melt and crisp.
  • Use room temperature tortillas to prevent tearing.
  • Reheat leftovers in a dry skillet to restore crispiness.
