- 4 Chicken Thighs (bone-in, skin-on)
- 2 tablespoons Cajun Seasoning
- 1 cup Long Grain White Rice
- 2 cups Chicken Broth
- 1 Red Bell Pepper, diced
- 1 Green Bell Pepper, diced
- 1 Onion, finely chopped
- 3 Garlic Cloves, minced
- 2 tablespoons Olive Oil
- Salt and Pepper, to taste
- Fresh Parsley or Cilantro, for garnish
Instructions
- Preheat a large skillet over medium-high heat.
- Season chicken with Cajun seasoning, salt, and pepper on all sides.
- Add olive oil to the skillet and sear chicken skin-side down until golden, about 4–5 minutes per side. Remove and set aside.
- In the same pan, sauté onion and bell peppers until soft. Add garlic and rice, toasting for 2 minutes.
- Pour in chicken broth and bring to a simmer. Nestle chicken on top.
- Cover and cook on low for 25 minutes until rice is tender and chicken is cooked through.
- Let rest a few minutes, garnish with herbs, and serve hot.
Notes
- Use skin-on thighs for best flavor and crispiness.
- To reduce heat, use mild Cajun seasoning or make your own with less cayenne.
- Add frozen corn or peas for extra color and texture.
- Leftovers make a great filling for burritos or stuffed peppers.
