Description

A fiery and flavorful one-pan dish combining crispy Cajun-seasoned chicken with tender, aromatic spiced rice filled with peppers and herbs.


Ingredients

  • 4 Chicken Thighs (bone-in, skin-on)
  • 2 tablespoons Cajun Seasoning
  • 1 cup Long Grain White Rice
  • 2 cups Chicken Broth
  • 1 Red Bell Pepper, diced
  • 1 Green Bell Pepper, diced
  • 1 Onion, finely chopped
  • 3 Garlic Cloves, minced
  • 2 tablespoons Olive Oil
  • Salt and Pepper, to taste
  • Fresh Parsley or Cilantro, for garnish


Instructions

  1. Preheat a large skillet over medium-high heat.
  2. Season chicken with Cajun seasoning, salt, and pepper on all sides.
  3. Add olive oil to the skillet and sear chicken skin-side down until golden, about 4–5 minutes per side. Remove and set aside.
  4. In the same pan, sauté onion and bell peppers until soft. Add garlic and rice, toasting for 2 minutes.
  5. Pour in chicken broth and bring to a simmer. Nestle chicken on top.
  6. Cover and cook on low for 25 minutes until rice is tender and chicken is cooked through.
  7. Let rest a few minutes, garnish with herbs, and serve hot.

Notes

  • Use skin-on thighs for best flavor and crispiness.
  • To reduce heat, use mild Cajun seasoning or make your own with less cayenne.
  • Add frozen corn or peas for extra color and texture.
  • Leftovers make a great filling for burritos or stuffed peppers.
