Description

Creamy Tuscan Chicken is a rich and flavorful dish made with tender chicken thighs simmered in a velvety garlic parmesan cream sauce, sun-dried tomatoes, and baby spinach. Perfect for a comforting dinner any night of the week.


Ingredients

  • 6 boneless skinless chicken thighs (about 1.5 pounds)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 2 cups baby spinach


Instructions

  1. Heat a large skillet over medium-high heat.
  2. Season chicken thighs with salt and pepper on both sides.
  3. Add olive oil to the hot skillet and sear chicken thighs for 5–6 minutes per side until golden brown and cooked through. Remove and set aside.
  4. Lower heat to medium. Add minced garlic and sauté for 30 seconds.
  5. Stir in sun-dried tomatoes, Italian seasoning, onion powder, and red pepper flakes.
  6. Pour in chicken broth and scrape up any browned bits from the pan.
  7. Add heavy cream and parmesan cheese. Simmer for 4–5 minutes until sauce thickens.
  8. Stir in baby spinach and cook until wilted.
  9. Return chicken to the pan and simmer for 2 more minutes, spooning sauce over the top.
  10. Serve hot over pasta, rice, or mashed potatoes.
