Creamy Tuscan Chicken Soup is a comforting, rich, and flavorful soup loaded with tender chicken, sun-dried tomatoes, spinach, and a creamy garlic-infused broth. It’s perfect for a cozy dinner and easy to make in one pot.


Ingredients

  • 1 tablespoon olive oil
  • 1 lb (450g) boneless, skinless chicken breasts or thighs, diced
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 1/2 cup sun-dried tomatoes (oil-packed), chopped
  • 1 teaspoon Italian seasoning
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups baby spinach
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • Optional: red pepper flakes for heat

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced chicken and cook until browned and cooked through. Remove and set aside.
  2. In the same pot, add diced onion and cook until softened, about 4–5 minutes. Add garlic and cook for another minute.
  3. Stir in sun-dried tomatoes and Italian seasoning. Cook for 2 minutes to release the flavors.
  4. Pour in chicken broth and bring to a simmer. Return the cooked chicken to the pot.
  5. Stir in the heavy cream and Parmesan cheese. Simmer for 5–10 minutes, stirring occasionally, until the soup thickens slightly.
  6. Add spinach and cook just until wilted, about 1–2 minutes.
  7. Season with salt, pepper, and red pepper flakes if desired. Serve hot.

Notes

  • For a thicker soup, you can stir in a slurry of 1 tablespoon cornstarch with 2 tablespoons water.
  • Great with crusty bread or served over cauliflower rice for a low-carb option.
  • Leftovers can be refrigerated for up to 3 days and reheated gently on the stovetop.
  • You can also use rotisserie chicken to save time.
