- 1 cup heavy cream
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 3/4 cup freshly grated parmesan cheese
Instructions
- Bring a large pot of salted water to a boil and cook the rigatoni until al dente, reserving a small amount of pasta water before draining.
- Heat olive oil and butter in a wide skillet over medium heat.
- Add the Italian sausage and cook, breaking it apart, until browned.
- Stir in the chopped onion and cook until softened, then add garlic and cook briefly until fragrant.
- Mix in the tomato paste and cook for one minute.
- Pour in the chicken broth and heavy cream, then add Italian seasoning, salt, black pepper, and red pepper flakes.
- Simmer gently until the sauce thickens slightly.
- Add the cooked rigatoni and parmesan cheese, stirring until the pasta is well coated.
- Adjust consistency with reserved pasta water if needed.
- Serve warm with extra parmesan if desired.
