- 1 cup orzo pasta
- 1 small onion, finely diced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 2 cups beef broth
- ½ cup parmesan cheese, freshly grated
- 1 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat a large skillet over medium heat.
- Add the olive oil, then cook the diced onion for about 3 minutes until softened. Stir in the garlic and cook for 30 seconds until fragrant.
- Add the ground beef and cook, breaking it up with a spoon, until browned and cooked through.
- Stir in the orzo, then pour in the beef broth. Season with salt and black pepper.
- Bring to a gentle simmer and cook for about 10 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.
- Lower the heat, then stir in the heavy cream and parmesan until the sauce turns smooth and creamy.
- Sprinkle with chopped parsley and serve warm.
Notes
- For the creamiest texture, stir the orzo occasionally so it does not stick to the skillet.
- If the sauce thickens too much, loosen it with a small splash of beef broth while reheating.
- Freshly grated parmesan melts smoother and tastes bolder than pre-shredded cheese.
