Description

These Creamy Garlic Parmesan Brussels Sprouts are a rich, comforting side dish with crispy bacon, tender Brussels sprouts, and a cheesy garlic cream sauce. Perfect for holiday dinners or a cozy weeknight treat.

Ingredients

Scale
  • 6 slices bacon*
  • 1 tablespoon butter
  • 4 cups (32 oz) Brussels sprouts, bottoms removed and halved
  • 1/2 cup onion, minced (optional)
  • 34 cloves garlic, minced
  • 1 teaspoon Italian seasoning (optional)
  • Salt and pepper, to taste
  • 1 cup heavy cream
  • 1/2 cup shredded parmesan cheese*
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. In a large skillet, cook the bacon over medium heat until crispy. Remove, drain on paper towels, and crumble. Reserve about 1 tablespoon of the bacon grease.
  2. Add butter to the skillet with the reserved bacon grease. Sauté the Brussels sprouts (cut side down) for 3–4 minutes until they start to caramelize.
  3. Add the minced onion (if using) and garlic. Cook until softened and fragrant, about 2 minutes.
  4. Season with salt, pepper, and Italian seasoning if desired. Stir well.
  5. Pour in the heavy cream and bring to a gentle simmer.
  6. Stir in parmesan and mozzarella cheese until melted and the sauce thickens slightly.
  7. Return crumbled bacon to the pan, mix, and cook for another 1–2 minutes.
  8. Serve hot as a side dish.

Notes

  • *You can omit the bacon for a vegetarian version.
  • For extra flavor, sprinkle with red pepper flakes or top with additional parmesan before serving.
  • This dish pairs beautifully with roasted chicken, steak, or pork chops.
