These Creamy Garlic Parmesan Brussels Sprouts are a rich, comforting side dish with crispy bacon, tender Brussels sprouts, and a cheesy garlic cream sauce. Perfect for holiday dinners or a cozy weeknight treat.

- 6 slices bacon*
- 1 tablespoon butter
- 4 cups (32 oz) Brussels sprouts, bottoms removed and halved
- 1/2 cup onion, minced (optional)
- 3–4 cloves garlic, minced
- 1 teaspoon Italian seasoning (optional)
- Salt and pepper, to taste
- 1 cup heavy cream
- 1/2 cup shredded parmesan cheese*
- 1/2 cup shredded mozzarella cheese
Instructions
- In a large skillet, cook the bacon over medium heat until crispy. Remove, drain on paper towels, and crumble. Reserve about 1 tablespoon of the bacon grease.
- Add butter to the skillet with the reserved bacon grease. Sauté the Brussels sprouts (cut side down) for 3–4 minutes until they start to caramelize.
- Add the minced onion (if using) and garlic. Cook until softened and fragrant, about 2 minutes.
- Season with salt, pepper, and Italian seasoning if desired. Stir well.
- Pour in the heavy cream and bring to a gentle simmer.
- Stir in parmesan and mozzarella cheese until melted and the sauce thickens slightly.
- Return crumbled bacon to the pan, mix, and cook for another 1–2 minutes.
- Serve hot as a side dish.
Notes
- *You can omit the bacon for a vegetarian version.
- For extra flavor, sprinkle with red pepper flakes or top with additional parmesan before serving.
- This dish pairs beautifully with roasted chicken, steak, or pork chops.
