- 1 yellow onion, diced
- 1/2 cup white wine
- 1/2 cup sun-dried tomatoes
- 1 1/2 cups heavy cream
- 1/2 cup fresh grated Parmesan cheese
- 2 tsp Italian seasoning
- 1 cup baby spinach leaves
- 1 tbsp fresh parsley
- Salt and pepper to taste
Instructions
- Heat butter in a large skillet over medium heat. Add diced onion and cook until translucent, about 3-4 minutes.
- Add garlic and cook for 1 minute until fragrant.
- Add shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp from skillet and set aside.
- Pour in white wine and deglaze the pan, scraping up any browned bits from the bottom.
- Add sun-dried tomatoes, heavy cream, Parmesan cheese, and Italian seasoning. Simmer for 3-5 minutes until the sauce thickens slightly.
- Stir in baby spinach and cook until wilted.
- Return shrimp to the skillet and coat with the creamy sauce. Cook for an additional 1-2 minutes to heat through.
- Season with salt and pepper to taste, garnish with fresh parsley, and serve immediately with pasta, rice, or crusty bread.

- Use fresh or frozen shrimp, but ensure they are fully thawed before cooking.
- Adjust the amount of white wine and cream for a thinner or thicker sauce according to preference.
