Description

A quick, cozy pasta dinner with a silky blended cottage cheese sauce, parmesan depth, and a fresh parsley finish.


Ingredients

  • 12 ounces pasta shells
  • 1 cup cottage cheese
  • 1/2 cup grated parmesan cheese
  • 2 cloves garlic
  • 1 tablespoon olive oil
  • 2 tablespoons chopped fresh parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Bring a large pot of salted water to a boil.
  2. In a blender or food processor, blend the cottage cheese, grated parmesan, garlic, olive oil, salt, and black pepper until completely smooth.
  3. Cook the pasta shells in the boiling water until al dente, following the package timing.
  4. Reserve a small splash of pasta water, then drain the pasta.
  5. Transfer the drained pasta to a large skillet, pour the blended sauce over it, and stir to coat.
  6. Warm over medium heat, stirring gently, until the sauce is glossy and clings to the pasta. Add a splash of reserved pasta water if needed to loosen.
  7. Stir in the chopped fresh parsley, taste, and adjust seasoning if needed.
  8. Serve warm, and add extra parmesan on top if you like.

Notes

  • Blend the sauce until fully smooth for the silkiest texture.
  • If the sauce thickens too much, loosen it with a splash of reserved pasta water while warming.
  • Reheat leftovers gently on the stove with a small splash of water to keep it creamy.
