- 12 ounces pasta shells
- 1 cup cottage cheese
- 1/2 cup grated parmesan cheese
- 2 cloves garlic
- 1 tablespoon olive oil
- 2 tablespoons chopped fresh parsley
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Bring a large pot of salted water to a boil.
- In a blender or food processor, blend the cottage cheese, grated parmesan, garlic, olive oil, salt, and black pepper until completely smooth.
- Cook the pasta shells in the boiling water until al dente, following the package timing.
- Reserve a small splash of pasta water, then drain the pasta.
- Transfer the drained pasta to a large skillet, pour the blended sauce over it, and stir to coat.
- Warm over medium heat, stirring gently, until the sauce is glossy and clings to the pasta. Add a splash of reserved pasta water if needed to loosen.
- Stir in the chopped fresh parsley, taste, and adjust seasoning if needed.
- Serve warm, and add extra parmesan on top if you like.
Notes
- Blend the sauce until fully smooth for the silkiest texture.
- If the sauce thickens too much, loosen it with a splash of reserved pasta water while warming.
- Reheat leftovers gently on the stove with a small splash of water to keep it creamy.
