Description

A creamy, smoky pasta dish made with chipotle-infused beef ragu and perfectly cooked cavatappi. Rich, comforting, and full of bold flavors, it’s a spicy twist on a classic comfort food.


Ingredients

  • 500 grams ground beef
  • 1 large yellow onion, finely chopped
  • 4 garlic cloves, minced
  • 2 chipotle peppers in adobo sauce, finely chopped
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 cup heavy cream
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 400 grams cavatappi or fusilli pasta
  • Fresh cilantro or parsley for garnish


Instructions

  1. Place a large skillet over medium heat and bring a pot of salted water to a boil for your pasta.
  2. In the hot skillet, add a splash of oil and sauté the chopped onions until translucent. Add the garlic and chipotle peppers and cook for another minute. Stir in the tomato paste and paprika until combined.
  3. Add the ground beef to the skillet and cook until browned. Break it up with your spoon for even cooking. Season with salt and pepper.
  4. Pour in the beef broth and simmer for about 10 minutes until slightly reduced. Stir in the heavy cream and let the sauce thicken, about 5 more minutes.
  5. While the sauce simmers, cook your pasta to al dente. Reserve ½ cup of pasta water, then drain.
  6. Toss the pasta directly into the sauce. Add reserved pasta water a little at a time if needed to loosen the sauce. Stir until everything is well coated and glossy.
  7. Plate it up hot with a sprinkle of fresh cilantro or parsley. Grab a fork and dig in.
