- 500 grams ground beef
- 1 large yellow onion, finely chopped
- 4 garlic cloves, minced
- 2 chipotle peppers in adobo sauce, finely chopped
- 2 tablespoons tomato paste
- 1 cup beef broth
- 1 cup heavy cream
- 1 teaspoon paprika
- Salt and pepper to taste
- 400 grams cavatappi or fusilli pasta
- Fresh cilantro or parsley for garnish
Instructions
- Place a large skillet over medium heat and bring a pot of salted water to a boil for your pasta.
- In the hot skillet, add a splash of oil and sauté the chopped onions until translucent. Add the garlic and chipotle peppers and cook for another minute. Stir in the tomato paste and paprika until combined.
- Add the ground beef to the skillet and cook until browned. Break it up with your spoon for even cooking. Season with salt and pepper.
- Pour in the beef broth and simmer for about 10 minutes until slightly reduced. Stir in the heavy cream and let the sauce thicken, about 5 more minutes.
- While the sauce simmers, cook your pasta to al dente. Reserve ½ cup of pasta water, then drain.
- Toss the pasta directly into the sauce. Add reserved pasta water a little at a time if needed to loosen the sauce. Stir until everything is well coated and glossy.
- Plate it up hot with a sprinkle of fresh cilantro or parsley. Grab a fork and dig in.
