Ingredients

  • 4 large potatoes, peeled and diced
  • 1 cup frozen peas
  • 1/2 cup heavy cream
  • 2 tablespoons unsalted butter
  • 1/4 cup milk
  • 1/2 teaspoon garlic powder
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Place the diced potatoes in a large pot and cover with water. Bring to a boil over medium-high heat. Cook for 12-15 minutes, or until the potatoes are tender when pierced with a fork.
  2. In the last 3-4 minutes of cooking, add the frozen peas to the pot and cook until heated through. Drain the potatoes and peas, reserving a bit of the cooking water.
  3. In the same pot, melt the butter over medium heat. Add the cream, milk, garlic powder, and a pinch of salt and pepper. Stir to combine.
  4. Return the potatoes and peas to the pot and gently toss them in the creamy sauce until evenly coated. If the sauce is too thick, add a little reserved cooking water until you reach the desired consistency.
  5. Adjust seasoning with salt and pepper to taste. Garnish with fresh parsley before serving.

Notes

  • For extra flavor, you can add a sprinkle of grated Parmesan cheese to the sauce.
  • If you prefer a lighter version, replace the heavy cream with half-and-half or milk.
