- 4 large potatoes, peeled and diced
- 1 cup frozen peas
- 1/2 cup heavy cream
- 2 tablespoons unsalted butter
- 1/4 cup milk
- 1/2 teaspoon garlic powder
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Place the diced potatoes in a large pot and cover with water. Bring to a boil over medium-high heat. Cook for 12-15 minutes, or until the potatoes are tender when pierced with a fork.
- In the last 3-4 minutes of cooking, add the frozen peas to the pot and cook until heated through. Drain the potatoes and peas, reserving a bit of the cooking water.
- In the same pot, melt the butter over medium heat. Add the cream, milk, garlic powder, and a pinch of salt and pepper. Stir to combine.
- Return the potatoes and peas to the pot and gently toss them in the creamy sauce until evenly coated. If the sauce is too thick, add a little reserved cooking water until you reach the desired consistency.
- Adjust seasoning with salt and pepper to taste. Garnish with fresh parsley before serving.
Notes
- For extra flavor, you can add a sprinkle of grated Parmesan cheese to the sauce.
- If you prefer a lighter version, replace the heavy cream with half-and-half or milk.
- This dish can be served as a side with any meat or as a vegetarian option with a simple salad.
