Description

A cozy, comforting vegan dumpling stew filled with fluffy, herbed dumplings floating in a hearty vegetable-packed broth. Perfect for chilly nights or whenever you need a warm, nourishing bowl of goodness.

Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ¾ cup unsweetened plant-based milk
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 large carrots, chopped
  • 2 stalks celery, sliced
  • 2 medium potatoes, diced
  • 1 cup green peas
  • 1 teaspoon fresh thyme, chopped
  • 2 tablespoons fresh parsley, chopped
  • 5 cups vegetable broth
  • 1 ½ teaspoons salt
  • ½ teaspoon black pepper

Instructions

  1. Place a large pot over medium heat to preheat while preparing vegetables.
  2. In a mixing bowl, combine flour, baking powder, salt, plant-based milk, and olive oil. Stir until just combined and set aside.
  3. Add olive oil to the heated pot, then sauté onion and garlic until fragrant. Add carrots, celery, and potatoes and cook for about 5 minutes.
  4. Pour in vegetable broth, then add thyme, salt, and pepper. Bring to a simmer, cover, and cook for 10–12 minutes until vegetables start to soften.
  5. Drop spoonfuls of the dumpling dough on top of the simmering stew. Cover and steam for 15 minutes without lifting the lid.
  6. Uncover and gently stir in peas and parsley. Let sit for 2–3 minutes uncovered.
  7. Ladle into bowls and serve hot, garnished with extra parsley if desired.

Notes

  • Don’t overmix dumpling dough for best texture.
  • Add peas at the end to preserve their bright color.
  • Let stew sit a few minutes before serving for fuller flavor.
  • To make gluten-free, use a 1:1 gluten-free baking blend.
