  • 1 lb large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1/2 cup canned coconut milk
  • 1 tablespoon lime juice
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili flakes (optional)
  • 1 medium sweet potato, peeled and grated
  • 1 cup cooked brown rice or quinoa
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (for garnish)
  • 1 tablespoon coconut oil (for cooking rice)
  • 1/4 cup green onions, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add garlic and sauté for 1-2 minutes until fragrant.
  2. Add shrimp to the skillet and cook for 3-4 minutes, flipping halfway through, until pink and cooked through.
  3. Stir in coconut milk, lime juice, cumin, and chili flakes (if using). Simmer for another 2-3 minutes, allowing the sauce to thicken slightly. Season with salt and pepper to taste.
  4. Meanwhile, heat coconut oil in a separate skillet over medium heat. Add the grated sweet potato and cook for 5-7 minutes, stirring occasionally, until tender and lightly browned.
  5. In a large bowl, combine cooked rice or quinoa with the sautéed sweet potato. Stir well to combine, seasoning with salt and pepper as desired.
  6. To serve, scoop the rice and sweet potato mixture into bowls. Top with coconut garlic shrimp and sauce. Garnish with fresh cilantro and green onions.

Notes

  • For extra creaminess, you can add a bit more coconut milk to the shrimp mixture.
  • If you’re looking for a lighter version, replace the coconut oil with olive oil when cooking the sweet potato rice.
