  • 2 cans white beans (Cannellini or Great Northern), drained and rinsed

  • 1 medium yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 2 cups chicken broth
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil
  • Fresh cilantro, chopped, for garnish


Instructions

  1. Set a large pot or Dutch oven over medium heat and add olive oil.

  3. Once the turkey is browned, stir in chili powder, cumin, salt, and black pepper. Cook for 1 minute to toast the spices.
  4. Add diced tomatoes (with juice), white beans, and chicken broth. Stir well to combine.
  5. Bring to a gentle boil, then reduce heat and simmer uncovered for 25-30 minutes.
  6. Add the corn during the last 5 minutes of simmering. Stir in chopped cilantro right before serving.
  7. Ladle into bowls and top with your favorite toppings like sour cream, cheese, or tortilla strips.
