  • 1 lb chorizo sausage, casing removed
  • 3 medium potatoes, peeled and diced
  • 1/2 onion, chopped
  • 1 red bell pepper, chopped
  • 6 large eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Olive oil for sautéing
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish with cooking spray or butter.
  2. In a large skillet, heat a bit of olive oil over medium heat. Add the diced potatoes and cook until they begin to soften, about 10 minutes. Remove from the skillet and set aside.
  3. In the same skillet, cook the chorizo over medium-high heat, breaking it apart until browned and fully cooked, about 8 minutes. Add the chopped onion and red bell pepper, cooking for an additional 3-4 minutes until softened.
  4. In a large bowl, whisk together the eggs, milk, garlic powder, paprika, salt, and pepper. Stir in the cooked potatoes, chorizo mixture, and shredded cheddar cheese.
  5. Pour the mixture into the prepared baking dish and spread it out evenly.
  6. Bake in the preheated oven for 25-30 minutes, or until the eggs are set and the top is lightly golden.
  7. Garnish with fresh cilantro, if desired, and serve warm.
