- 3 medium potatoes, peeled and diced

- 1/2 teaspoon paprika

Instructions
- Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish with cooking spray or butter.
- In a large skillet, heat a bit of olive oil over medium heat. Add the diced potatoes and cook until they begin to soften, about 10 minutes. Remove from the skillet and set aside.
- In the same skillet, cook the chorizo over medium-high heat, breaking it apart until browned and fully cooked, about 8 minutes. Add the chopped onion and red bell pepper, cooking for an additional 3-4 minutes until softened.
- In a large bowl, whisk together the eggs, milk, garlic powder, paprika, salt, and pepper. Stir in the cooked potatoes, chorizo mixture, and shredded cheddar cheese.
- Pour the mixture into the prepared baking dish and spread it out evenly.
- Bake in the preheated oven for 25-30 minutes, or until the eggs are set and the top is lightly golden.
- Garnish with fresh cilantro, if desired, and serve warm.
