Description

A rich and moist chocolate zucchini bread packed with deep cocoa flavor and melty chocolate chips, perfectly balanced with the natural softness of fresh zucchini.


Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 ½ cups grated zucchini
  • ¾ cup chocolate chips


Instructions

  1. Preheat your oven to 175°C and grease a loaf pan.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In another bowl, mix granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until smooth.
  4. Add the dry ingredients into the wet mixture and mix gently.
  5. Fold in grated zucchini and chocolate chips.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for about 50 minutes until a toothpick inserted comes out mostly clean.
  8. Let cool in the pan before transferring to a rack, then slice and serve.

Notes

  • Do not overmix the batter to keep the bread soft
  • Use freshly grated zucchini for best moisture
  • Check doneness a few minutes early to avoid overbaking
  • Add extra chocolate chips on top before baking for a nicer finish
