- 1 ½ cups all-purpose flour
- ½ cup unsweetened cocoa powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ cup granulated sugar
- ½ cup brown sugar
- 2 large eggs
- ½ cup vegetable oil
- 1 teaspoon vanilla extract
- 1 ½ cups grated zucchini
- ¾ cup chocolate chips
Instructions
- Preheat your oven to 175°C and grease a loaf pan.
- In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
- In another bowl, mix granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until smooth.
- Add the dry ingredients into the wet mixture and mix gently.
- Fold in grated zucchini and chocolate chips.
- Pour the batter into the prepared loaf pan.
- Bake for about 50 minutes until a toothpick inserted comes out mostly clean.
- Let cool in the pan before transferring to a rack, then slice and serve.
Notes
- Do not overmix the batter to keep the bread soft
- Use freshly grated zucchini for best moisture
- Check doneness a few minutes early to avoid overbaking
- Add extra chocolate chips on top before baking for a nicer finish
