- 1/2 cup unsweetened cocoa powder (Dutch-processed if available)
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 8 tablespoons unsalted butter, softened
- 1 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup milk chocolate chips
- 1/2 cup sweetened condensed milk
- 24 ounces maraschino cherries (without stems, reserve 2 tablespoons juice and drain the rest)
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla extract.
- Gradually mix in the dry ingredients until well combined. The dough will be thick.
- Roll dough into 1-inch balls and place on prepared baking sheets. Flatten slightly with the palm of your hand.
- Press your thumb into the center of each cookie to create an indent. Place one maraschino cherry into each indent.
- In a small saucepan over low heat, melt the chocolate chips with sweetened condensed milk, stirring until smooth. Add reserved cherry juice and stir until glossy.
- Spoon about 1 teaspoon of the chocolate mixture over each cherry, spreading to cover it completely.
- Bake cookies for 10–12 minutes, until set. Let cool on baking sheets for 5 minutes before transferring to a wire rack.
