Description

  • 1/2 cup unsalted butter, softened
  • 1 cup coconut sugar
  • 1 egg
  • 1 egg yolk
  • 1 tbsp vanilla extract
  • 1 cup flour
  • 1/2 tsp baking soda
  • Pinch of salt
  • 1/2 cup dark chocolate chips, chopped
  • 1/2 cup roasted pistachios, chopped

Chocolate Coating

  • 1 cup dark chocolate chips
  • 1 tsp coconut oil
  • 1/2 cup roasted pistachios, finely chopped


Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together softened butter and coconut sugar until smooth. Add egg, egg yolk, and vanilla extract, and mix until combined.
  3. In a separate bowl, whisk together flour, baking soda, and salt. Gradually fold into the wet ingredients.
  4. Stir in chopped dark chocolate chips and chopped pistachios.
  5. Drop cookie dough by tablespoonfuls onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 10–12 minutes, or until edges are lightly golden. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  7. For the chocolate coating, melt dark chocolate chips with coconut oil over a double boiler or in the microwave, stirring until smooth.
  8. Dip each cooled cookie halfway into the melted chocolate, then sprinkle with finely chopped pistachios. Allow chocolate to set before serving.
