- 1/2 cup unsalted butter, softened
- 1 cup coconut sugar
- 1 egg
- 1 egg yolk
- 1 tbsp vanilla extract
- 1 cup flour
- 1/2 tsp baking soda
- Pinch of salt
- 1/2 cup dark chocolate chips, chopped
- 1/2 cup roasted pistachios, chopped
Chocolate Coating
- 1 cup dark chocolate chips
- 1 tsp coconut oil
- 1/2 cup roasted pistachios, finely chopped
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together softened butter and coconut sugar until smooth. Add egg, egg yolk, and vanilla extract, and mix until combined.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually fold into the wet ingredients.
- Stir in chopped dark chocolate chips and chopped pistachios.
- Drop cookie dough by tablespoonfuls onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10–12 minutes, or until edges are lightly golden. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- For the chocolate coating, melt dark chocolate chips with coconut oil over a double boiler or in the microwave, stirring until smooth.
- Dip each cooled cookie halfway into the melted chocolate, then sprinkle with finely chopped pistachios. Allow chocolate to set before serving.

- For extra texture, lightly toast the pistachios before chopping.
