- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups semi-sweet chocolate chips
- 8 oz cream cheese (softened)
- 1/2 cup powdered sugar
- 1/2 cup mini chocolate chips
Instructions
- Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the butter, brown sugar, and granulated sugar until fluffy. Beat in eggs and vanilla.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to wet ingredients, mixing gently. Fold in chocolate chips.
- Scoop dough onto prepared baking sheets and bake for 9–11 minutes. Let cool completely on wire racks.
- In a bowl, beat cream cheese with powdered sugar and vanilla until smooth. Fold in mini chocolate chips. Chill filling for 30 minutes.
- Spread or pipe filling on the flat side of half the cookies. Top with remaining cookies to create sandwiches.
- Serve immediately or chill for a firmer texture.
