Description

A rich and decadent chocolate cake with the earthy sweetness of chestnuts. This moist and luxurious cake is perfect for holiday gatherings or special occasions.

Ingredients

Scale
  • 1 cup cooked and peeled chestnuts (or chestnut puree)
  • 1 and 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup whole milk
  • 1/2 cup boiling water
  • 1/2 cup semi-sweet chocolate chips
  • Whipped cream or chocolate ganache for topping (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, sift together flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
  3. In another bowl, beat together the softened butter and sugar until light and fluffy, about 3 minutes.
  4. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  5. In a separate small bowl, combine the chestnut puree and milk, then add this mixture to the butter-sugar mixture, alternating with the dry ingredients, beginning and ending with the dry ingredients. Mix until just combined.
  6. Stir in the boiling water and chocolate chips, creating a smooth, thin batter.
  7. Pour the batter evenly into the prepared cake pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cakes cool in the pans for 10 minutes, then remove from the pans and cool completely on a wire rack.
  9. Once cooled, frost with whipped cream or chocolate ganache, and garnish with additional chestnuts or cocoa powder if desired.

Notes

  • If you use chestnut puree, ensure it’s unsweetened for better control over sweetness.
  • This cake pairs beautifully with a cup of coffee or a rich dessert wine.
  • You can use a mix of milk and dark chocolate chips for a deeper chocolate flavor.
