  • 2 medium ripe bananas, sliced into 1/4 inch rounds
  • 1/4 cup (60 grams) natural peanut butter
  • 1/4 cup (30 grams) chopped mixed nuts


Instructions

  1. Line a baking sheet with parchment paper and clear space in the refrigerator.
  2. Melt the dark chocolate chips in a microwave-safe bowl in 20 second intervals, stirring between each interval until smooth.
  3. Pour the melted chocolate onto the lined baking sheet and spread into an even rectangle about 1/4 inch thick.
  4. Arrange the banana slices evenly over the melted chocolate.
  5. Drizzle the peanut butter over the top and sprinkle with chopped mixed nuts, gently pressing them into the chocolate.
  6. Refrigerate for about 1 hour, or until fully set and firm.
  7. Lift the parchment paper and break the bark into 8 rustic pieces before serving.
