- 1.5 pounds Chicken Thighs, boneless and skinless
- 1/2 cup Yogurt
- 2 tablespoons Lemon Juice
- 3 tablespoons Olive Oil
- 6 Garlic Cloves, minced
- 1 teaspoon Ground Cumin
- 1 teaspoon Paprika
- 1/2 teaspoon Ground Turmeric
- 1/4 teaspoon Cinnamon
- 1.5 teaspoons Salt
- 1/2 teaspoon Black Pepper
- 3 medium Potatoes, cut into fries
- 1 cup Pickles, sliced
- 4 Flatbreads or Pitas
- 1 cup Garlic Sauce (Toum)
Instructions
- In a large bowl, mix yogurt, lemon juice, olive oil, garlic, cumin, paprika, turmeric, cinnamon, salt, and pepper. Add chicken and coat well. Marinate for at least 2 hours or overnight.
- Heat a grill pan or skillet over medium-high heat. Lightly oil and sear chicken for 5–7 minutes per side until cooked through. Let rest and slice.
- Fry or bake the potato fries until golden and crispy.
- Warm flatbreads and prepare garlic sauce and pickles.
- Spread garlic sauce on flatbread, layer with chicken, fries, and pickles, then roll tightly.
- Slice wrap in half and serve warm.
