Description

Juicy spiced chicken wrapped in warm flatbread with crispy fries, tangy pickles, and creamy garlic sauce for a perfect Middle Eastern street food experience.


Ingredients

  • 1.5 pounds Chicken Thighs, boneless and skinless
  • 1/2 cup Yogurt
  • 2 tablespoons Lemon Juice
  • 3 tablespoons Olive Oil
  • 6 Garlic Cloves, minced
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Paprika
  • 1/2 teaspoon Ground Turmeric
  • 1/4 teaspoon Cinnamon
  • 1.5 teaspoons Salt
  • 1/2 teaspoon Black Pepper
  • 3 medium Potatoes, cut into fries
  • 1 cup Pickles, sliced
  • 4 Flatbreads or Pitas
  • 1 cup Garlic Sauce (Toum)


Instructions

  1. In a large bowl, mix yogurt, lemon juice, olive oil, garlic, cumin, paprika, turmeric, cinnamon, salt, and pepper. Add chicken and coat well. Marinate for at least 2 hours or overnight.
  2. Heat a grill pan or skillet over medium-high heat. Lightly oil and sear chicken for 5–7 minutes per side until cooked through. Let rest and slice.
  3. Fry or bake the potato fries until golden and crispy.
  4. Warm flatbreads and prepare garlic sauce and pickles.
  5. Spread garlic sauce on flatbread, layer with chicken, fries, and pickles, then roll tightly.
  6. Slice wrap in half and serve warm.
