Description

Ingredients

  • 1 ½ pounds boneless chicken thighs
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 large onion, sliced
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 lime, juiced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper


Instructions

  1. Place your cast iron skillet on medium-high heat and let it get hot.
  2. In a large bowl, toss the chicken with olive oil, garlic, lime juice, chili powder, cumin, paprika, salt, and pepper until well coated.
  3. Add a drizzle of oil to your hot skillet and let it shimmer.
  4. Place the chicken in the skillet in a single layer and sear for 4–5 minutes per side until golden and cooked through.
  5. Remove the chicken, then add sliced peppers and onions. Sauté for 5–6 minutes until tender-crisp and slightly charred.
  6. Return the chicken to the skillet and toss everything together for about a minute.
  7. Serve in warm tortillas with your favorite toppings.
