Ingredients

  • 2 cups diced boneless skinless chicken
  • 1 cup all purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ½ cup unsalted butter, melted
  • 1 cup whole milk
  • 2 cups chicken broth
  • 1 cup frozen peas
  • 1 cup diced carrots
  • ½ cup diced yellow onion
  • 1 teaspoon dried thyme


Instructions

  1. Preheat oven to 375 degrees Fahrenheit (190 degrees Celsius).
  2. In a bowl, whisk together flour, baking powder, salt, black pepper, milk, and melted butter until just combined.
  3. Pour remaining melted butter into a 9×13 inch baking dish and spread evenly.
  4. Layer diced chicken, peas, carrots, and onion over the butter. Sprinkle dried thyme over the top. Pour chicken broth evenly over the mixture.
  5. Gently spoon the biscuit batter over the filling without stirring.
  6. Bake for 40 to 45 minutes until the top is golden brown and filling is bubbling.
  7. Let cobbler rest for 10 minutes to thicken.
  8. Serve warm and enjoy.
