- 12 oz pasta (penne or rigatoni)
- 2 tbsp olive oil
- 2 chicken breasts, diced
- 1 cup mushrooms, sliced
- 2 cloves garlic, minced
- 1/2 cup dry white wine
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tbsp fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add diced chicken and cook until browned and cooked through, about 6–7 minutes.
- Add sliced mushrooms and sauté until tender, about 4 minutes.
- Add minced garlic and cook for 1 minute until fragrant.
- Pour in white wine and simmer until reduced by half.
- Lower heat and stir in heavy cream and Parmesan cheese. Cook until sauce thickens slightly, about 3–4 minutes.
- Add cooked pasta to the skillet and toss to coat with the sauce. Season with salt and pepper.
- Sprinkle with fresh parsley before serving.
