Description

Ingredients

  • 12 oz pasta (penne or rigatoni)
  • 2 tbsp olive oil
  • 2 chicken breasts, diced
  • 1 cup mushrooms, sliced
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add diced chicken and cook until browned and cooked through, about 6–7 minutes.
  3. Add sliced mushrooms and sauté until tender, about 4 minutes.
  4. Add minced garlic and cook for 1 minute until fragrant.
  5. Pour in white wine and simmer until reduced by half.
  6. Lower heat and stir in heavy cream and Parmesan cheese. Cook until sauce thickens slightly, about 3–4 minutes.
  7. Add cooked pasta to the skillet and toss to coat with the sauce. Season with salt and pepper.
  8. Sprinkle with fresh parsley before serving.
