Description

Creamy, cozy, and packed with flavor, these Chicken, Bacon & Boursin Mash Bowls are the ultimate comfort food with a gourmet twist. Perfect for weeknights or Sunday dinner, they blend fluffy mashed potatoes, savory chicken, and herby Boursin cheese into one unforgettable bowl.


Ingredients

  • 500g chicken thighs, boneless and skinless, cut into chunks
  • 1kg Yukon Gold or Russet potatoes, peeled and cubed
  • 150g Boursin cheese (Garlic & Herb)
  • 150g bacon, cooked crisp and chopped
  • 50g unsalted butter
  • 100ml heavy cream, warmed
  • 2 garlic cloves, minced
  • 1 tablespoon olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon fresh thyme, chopped


Instructions

  1. Preheat your oven to 200°C (400°F). Line a baking tray or heat a skillet.
  2. In a bowl, toss chicken and garlic with olive oil, salt, pepper, and half the thyme.
  3. Spread chicken and garlic on your tray or skillet. Roast for 20–25 minutes until golden and cooked through.
  4. Meanwhile, boil potatoes in salted water until fork-tender. Drain and return to the pot.
  5. Add butter, cream, and Boursin cheese to the hot potatoes. Mash until smooth and creamy. Season with salt and pepper.
  6. Stir in crumbled bacon and the remaining thyme. Mix gently to combine.
  7. Spoon mash into bowls, top with roasted chicken and garlic, and garnish with fresh herbs.

  • Let Boursin cheese come to room temp for easier melting.
  • Cut potatoes evenly so they cook uniformly.
  • Use a potato ricer for ultra-smooth texture.
  • Store leftovers in an airtight container for up to 3 days.
