- 500g chicken thighs, boneless and skinless, cut into chunks
- 1kg Yukon Gold or Russet potatoes, peeled and cubed
- 150g Boursin cheese (Garlic & Herb)
- 150g bacon, cooked crisp and chopped
- 50g unsalted butter
- 100ml heavy cream, warmed
- 2 garlic cloves, minced
- 1 tablespoon olive oil
- Salt, to taste
- Black pepper, to taste
- 1 tablespoon fresh thyme, chopped
Instructions
- Preheat your oven to 200°C (400°F). Line a baking tray or heat a skillet.
- In a bowl, toss chicken and garlic with olive oil, salt, pepper, and half the thyme.
- Spread chicken and garlic on your tray or skillet. Roast for 20–25 minutes until golden and cooked through.
- Meanwhile, boil potatoes in salted water until fork-tender. Drain and return to the pot.
- Add butter, cream, and Boursin cheese to the hot potatoes. Mash until smooth and creamy. Season with salt and pepper.
- Stir in crumbled bacon and the remaining thyme. Mix gently to combine.
- Spoon mash into bowls, top with roasted chicken and garlic, and garnish with fresh herbs.
Notes
- Let Boursin cheese come to room temp for easier melting.
- Cut potatoes evenly so they cook uniformly.
- Use a potato ricer for ultra-smooth texture.
