Scale
Filling Ingredients
- 300g boneless, skinless chicken breast, finely chopped
- 2 medium courgettes, sliced
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp butter
- 1 tbsp fresh thyme or parsley, chopped
- Salt, to taste
- Black pepper, to taste
Pastry and Finishing
- 1 sheet ready-rolled shortcrust pastry (approximately enough for 6–8 pasties)
- 1 egg, beaten (for egg wash)
Instructions
- Prepare the Filling: Finely chop the chicken breast into small cubes for even cooking. Melt butter in a pan and sauté the onions until translucent. Add the garlic, courgettes, and chicken, cooking gently until the courgettes are soft and starting to caramelize, and the chicken is cooked through. Season with salt, pepper, and fresh herbs. Remove from heat and let the filling cool slightly.
- Roll and Cut the Pastry: Lightly flour a surface and roll out the ready-rolled shortcrust pastry sheet. Using a round cutter or bowl, cut out circles about 6-7 inches in diameter. These will become the bases and tops of the pasties.
- Fill and Seal the Pasties: Place a generous spoonful of cooled filling onto the center of each pastry circle. Fold the pastry over to form a half-moon shape. Press the edges firmly together and crimp with a fork or fingers to seal well. Brush the top of each pasty with beaten egg for a glossy, golden finish.
- Bake to Perfection: Preheat the oven to 200°C (390°F). Place the pasties on a baking tray lined with parchment paper, spacing them apart. Bake for 25-30 minutes until the pastry is golden brown and crisp. Let rest a few minutes before serving to allow the filling to settle.
Notes
- Don’t overfill the pasties to prevent leaks and ensure even cooking.
- Cool the filling before assembling to avoid soggy pastry.
- Use fresh herbs such as thyme or parsley to brighten the flavors.
- For extra golden shine, apply a second egg wash halfway through baking.
- Make small slits on the pastry tops to allow steam to escape and maintain crispness.
