Description

This Chicken Alfredo Lasagna is a creamy, cheesy delight layered with tender chicken, fresh spinach, and rich Alfredo sauce. Perfect for a comforting family dinner or special occasion.

For the Chicken Alfredo Lasagna:

  • 2 tablespoons butter
  • 2 garlic cloves, finely minced
  • 1 small yellow onion, diced
  • 8 ounces fresh baby spinach
  • 3 cups heavy cream
  • 1 cup whole milk
  • 1½ cups grated Parmesan cheese
  • 15 ounces ricotta cheese
  • 1½ teaspoons sea salt
  • ½ teaspoon black pepper
  • 3 cups shredded rotisserie chicken
  • 15 lasagna noodles, cooked
  • 3 cups shredded Mozzarella cheese


Instructions

  1. Preheat oven to 180°C (350°F) and lightly grease a 9×13-inch baking dish.
  2. In a large skillet, melt butter over medium heat. Add garlic and onion, sauté until fragrant and translucent.
  3. Add spinach and cook until wilted. Remove from heat.
  4. In a separate saucepan, combine heavy cream, milk, and Parmesan cheese over medium heat. Stir until cheese melts and sauce thickens.
  5. In a bowl, mix ricotta cheese with salt and pepper.
  6. Spread a thin layer of Alfredo sauce on the bottom of the prepared baking dish.
  7. Layer 5 lasagna noodles over the sauce. Spread a third of the ricotta mixture, a third of the chicken, a third of the spinach mixture, and a layer of Alfredo sauce. Sprinkle with mozzarella.
  8. Repeat layering two more times, ending with a layer of mozzarella on top.
  9. Cover with foil and bake for 25 minutes. Remove foil and bake an additional 15 minutes, or until bubbly and golden on top.
  10. Let stand for 10 minutes before slicing and serving.

Notes

  • Use fresh or frozen spinach according to availability.
  • Leftover rotisserie chicken works well to save time.
  • Can be prepared a day ahead and baked when ready to serve.
  • For a lighter version, use part-skim milk and reduced-fat cheeses.
