This Chicken Alfredo Lasagna is a creamy, cheesy delight layered with tender chicken, fresh spinach, and rich Alfredo sauce. Perfect for a comforting family dinner or special occasion.

For the Chicken Alfredo Lasagna:
- 2 tablespoons butter
- 2 garlic cloves, finely minced
- 1 small yellow onion, diced
- 8 ounces fresh baby spinach
- 3 cups heavy cream
- 1 cup whole milk
- 1½ cups grated Parmesan cheese
- 15 ounces ricotta cheese
- 1½ teaspoons sea salt
- ½ teaspoon black pepper
- 3 cups shredded rotisserie chicken
- 15 lasagna noodles, cooked
- 3 cups shredded Mozzarella cheese
Instructions
- Preheat oven to 180°C (350°F) and lightly grease a 9×13-inch baking dish.
- In a large skillet, melt butter over medium heat. Add garlic and onion, sauté until fragrant and translucent.
- Add spinach and cook until wilted. Remove from heat.
- In a separate saucepan, combine heavy cream, milk, and Parmesan cheese over medium heat. Stir until cheese melts and sauce thickens.
- In a bowl, mix ricotta cheese with salt and pepper.
- Spread a thin layer of Alfredo sauce on the bottom of the prepared baking dish.
- Layer 5 lasagna noodles over the sauce. Spread a third of the ricotta mixture, a third of the chicken, a third of the spinach mixture, and a layer of Alfredo sauce. Sprinkle with mozzarella.
- Repeat layering two more times, ending with a layer of mozzarella on top.
- Cover with foil and bake for 25 minutes. Remove foil and bake an additional 15 minutes, or until bubbly and golden on top.
- Let stand for 10 minutes before slicing and serving.
Notes
- Use fresh or frozen spinach according to availability.
- Leftover rotisserie chicken works well to save time.
- Can be prepared a day ahead and baked when ready to serve.
- For a lighter version, use part-skim milk and reduced-fat cheeses.
