Description
A hearty and flavorful Cheesy Italian Egg Casserole with potatoes, spicy Italian sausage, bell peppers, sun-dried tomatoes, and melted mozzarella. Perfect for breakfast, brunch, or a make-ahead meal.

- 20 oz. (about 2½ cups) Yukon gold potatoes, cut into ½-1 inch cubes
- 1 lb. hot Italian sausage
- 1 red bell pepper, diced
- 1 medium white onion, diced
- 3 garlic cloves, minced
- 12 eggs
- 1 cup milk
- ⅔ cup sun-dried tomatoes in oil, drained & chopped
- 2 tsp Italian seasoning
- 1 tsp salt
- ½ tsp black pepper
- ¼ tsp red pepper flakes
- 1-1½ cups shredded mozzarella cheese
- Fresh basil, thinly sliced, for garnish
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- In a large skillet over medium heat, cook the Italian sausage until browned and cooked through, breaking it up into small pieces.
- Add the diced red bell pepper, onion, and minced garlic to the skillet. Sauté for 4-5 minutes until vegetables are softened.
- Meanwhile, parboil the potato cubes in salted boiling water for 5-7 minutes until slightly tender but not fully cooked. Drain.
- In a large bowl, whisk together the eggs, milk, Italian seasoning, salt, black pepper, and red pepper flakes.
- Layer the parboiled potatoes in the prepared baking dish, followed by the cooked sausage and vegetable mixture, and chopped sun-dried tomatoes.
- Pour the egg mixture evenly over the layered ingredients.
- Sprinkle shredded mozzarella cheese evenly on top.
- Bake for 35-40 minutes, or until eggs are set and cheese is golden and bubbly.
- Garnish with fresh sliced basil before serving.
Notes
- Parboiling the potatoes ensures they cook fully in the casserole without becoming mushy.
- Use mild sausage if you prefer less spice.
- Can be prepared the night before and baked in the morning for convenience.
- Leftovers can be stored in the fridge for up to 3 days and reheated in the oven or microwave.
