- 1 cup all-purpose flour
- 1/4 cup cornstarch
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Vegetable oil, for frying
- 1/4 cup honey
- 3 tablespoons sriracha sauce
- 8 to 10 slider buns
- 8 to 10 slices cheddar cheese
- Pickles, sliced
- 1 cup red cabbage slaw (optional)
Instructions
- Heat oil in a frying pan or deep fryer to 350°F.
- In a bowl, marinate chicken thighs in buttermilk for at least 15 minutes.
- Mix flour, cornstarch, garlic powder, paprika, salt, and pepper in another bowl.
- Remove chicken from buttermilk, dredge in flour mixture, and press to coat well.
- Fry until golden brown and cooked through, about 6 minutes per piece.
- While hot, place a slice of cheese on each piece so it melts slightly.
- Warm slider buns lightly.
- Mix honey and sriracha together in a bowl.
- Spread sauce on buns, layer with chicken, pickles, and slaw if using.
- Top with the bun and serve warm.
Notes
- Double dredge chicken for extra crunch.
- Toast buns for a firmer texture that holds sauce better.
- Adjust sriracha amount to your spice preference.
- Store leftover components separately to keep everything crisp.
