- 1 large Yellow Onion, thinly sliced
- 2 tablespoons Olive Oil
- 8 Fresh Sage Leaves, chopped
- 1 cup Gruyère Cheese, shredded
- 1/3 cup Parmesan Cheese, grated
- 1 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 1 Egg, beaten
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss butternut squash slices with olive oil, salt, and pepper. Sauté the onions until golden and soft.
- Roll out the puff pastry on the baking sheet. Score a 1-inch border around the edge with a knife.
- Layer caramelized onions, followed by squash slices, shredded Gruyère, parmesan, and chopped sage.
- Brush the pastry border with the beaten egg.
- Bake for 25–30 minutes, until golden and bubbling.
- Let rest for 10 minutes, garnish if desired, slice, and serve warm.

- Roast squash slices briefly before baking for extra flavor.
