Description

Chai Cookies are aromatic and spiced cookies infused with classic chai spices like cinnamon, ginger, cardamom, and cloves. Perfectly buttery with a warm, cozy flavor, ideal for tea time or holiday treats.

Ingredients

Scale
  • 6 tablespoons (75 g) granulated white sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • 1/8 teaspoon ground allspice
  • 1/8 teaspoon ground nutmeg
  • ¼ teaspoon ground cardamom
  • Pinch of ground cloves
  • 1 ¼ cups (280 g) unsalted butter, softened
  • 2 cups (250 g) all-purpose flour, spooned and leveled
  • 1 tablespoon ground cinnamon
  • 1 ½ teaspoons ground ginger
  • ½ teaspoon ground allspice
  • ½ teaspoon ground nutmeg
  • 1 teaspoon ground cardamom
  • ¼ teaspoon ground cloves
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a small bowl, mix 6 tablespoons sugar with ½ teaspoon cinnamon, ¼ teaspoon ginger, 1/8 teaspoon allspice, 1/8 teaspoon nutmeg, ¼ teaspoon cardamom, and a pinch of cloves. Set aside.
  3. In a large bowl, cream the butter until smooth and fluffy.
  4. Add the spice-sugar mixture to the butter and mix well.
  5. In a separate bowl, combine flour, 1 tablespoon cinnamon, 1 ½ teaspoons ginger, ½ teaspoon allspice, ½ teaspoon nutmeg, 1 teaspoon cardamom, ¼ teaspoon cloves, baking powder, and baking soda.
  6. Gradually add dry ingredients to the butter mixture, mixing until a soft dough forms.
  7. Shape dough into 1-inch balls and place on the prepared baking sheet about 2 inches apart.
  8. Flatten each ball slightly with the bottom of a glass or your fingers.
  9. Bake for 10-12 minutes, until edges are lightly golden.
  10. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • Ensure butter is at room temperature for easy mixing and a tender texture.
  • Adjust spices to your taste preference for a stronger or milder chai flavor.
  • Store cookies in an airtight container at room temperature for up to a week.
  • Optional: roll cookie dough balls in extra sugar before baking for a slightly crunchy exterior.
