- 1 ¼ cups (280 g) unsalted butter, softened
- 2 cups (250 g) all-purpose flour, spooned and leveled

- ½ teaspoon ground nutmeg
- 1 teaspoon ground cardamom
- ¼ teaspoon ground cloves
- ½ teaspoon baking powder
- ½ teaspoon baking soda
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a small bowl, mix 6 tablespoons sugar with ½ teaspoon cinnamon, ¼ teaspoon ginger, 1/8 teaspoon allspice, 1/8 teaspoon nutmeg, ¼ teaspoon cardamom, and a pinch of cloves. Set aside.
- In a large bowl, cream the butter until smooth and fluffy.
- Add the spice-sugar mixture to the butter and mix well.
- In a separate bowl, combine flour, 1 tablespoon cinnamon, 1 ½ teaspoons ginger, ½ teaspoon allspice, ½ teaspoon nutmeg, 1 teaspoon cardamom, ¼ teaspoon cloves, baking powder, and baking soda.
- Gradually add dry ingredients to the butter mixture, mixing until a soft dough forms.
- Shape dough into 1-inch balls and place on the prepared baking sheet about 2 inches apart.
- Flatten each ball slightly with the bottom of a glass or your fingers.
- Bake for 10-12 minutes, until edges are lightly golden.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
