Description

A quick one-skillet dinner with golden seared chicken, creamy melted mozzarella, juicy cherry tomatoes, and fresh basil for that classic Caprese vibe in every bite.


Ingredients

  • 4 boneless skinless chicken cutlets (about 1.5 pounds total)
  • 8 ounces fresh mozzarella, sliced
  • 1 cup whole cherry tomatoes
  • 1/4 cup fresh basil leaves
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Heat a large skillet over medium heat and add the olive oil.
  2. Season the chicken cutlets on both sides with salt and black pepper.
  3. Add the chicken to the skillet and cook for about 4 minutes, until the first side is golden.
  4. Flip the chicken and cook for about 3 minutes more.
  5. Add the minced garlic and cherry tomatoes to the skillet and cook for about 2 minutes, stirring gently, until the garlic smells fragrant and the tomatoes start to soften.
  6. Lay the mozzarella slices over the chicken. Reduce heat to medium-low and cover the skillet until the cheese melts, about 2 to 3 minutes.
  7. Turn off the heat, scatter fresh basil over the top, and serve warm straight from the skillet.

Notes

  • For the juiciest chicken, avoid high heat, keep it at a steady medium so it browns without drying out.
  • Add basil at the very end so it stays bright and fresh.
  • If your mozzarella is very wet, blot it lightly with a paper towel so the skillet does not get watery.
