- 4 boneless skinless chicken cutlets (about 1.5 pounds total)
- 8 ounces fresh mozzarella, sliced
- 1 cup whole cherry tomatoes
- 1/4 cup fresh basil leaves
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Heat a large skillet over medium heat and add the olive oil.
- Season the chicken cutlets on both sides with salt and black pepper.
- Add the chicken to the skillet and cook for about 4 minutes, until the first side is golden.
- Flip the chicken and cook for about 3 minutes more.
- Add the minced garlic and cherry tomatoes to the skillet and cook for about 2 minutes, stirring gently, until the garlic smells fragrant and the tomatoes start to soften.
- Lay the mozzarella slices over the chicken. Reduce heat to medium-low and cover the skillet until the cheese melts, about 2 to 3 minutes.
- Turn off the heat, scatter fresh basil over the top, and serve warm straight from the skillet.
Notes
- For the juiciest chicken, avoid high heat, keep it at a steady medium so it browns without drying out.
- Add basil at the very end so it stays bright and fresh.
- If your mozzarella is very wet, blot it lightly with a paper towel so the skillet does not get watery.
