A cozy twist on the classic Caprese, this cheesy chicken casserole brings together juicy tomatoes, creamy mozzarella, fresh basil, and tender chicken in one deliciously baked dish.

- 3 cups cooked chicken, shredded or cubed
- 2 cups cherry tomatoes, halved
- 1 cup fresh basil leaves, torn
- 2 cups shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and black pepper, to taste
- 3 cups cooked pasta (penne or fusilli, optional)
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch casserole dish.
- In a bowl, toss the cooked chicken with olive oil, minced garlic, salt, and pepper.
- Spread half of the cherry tomatoes on the bottom of the baking dish. Add the seasoned chicken on top.
- Layer the remaining tomatoes over the chicken, then sprinkle with mozzarella and parmesan cheese.
- Add the torn basil leaves across the top.
- Cover with foil and bake for 20 minutes. Remove foil and bake for another 10 minutes, until golden and bubbly.
- Let the casserole rest for 10 minutes before serving.
- Optional: Drizzle with balsamic glaze and garnish with extra basil before serving.
