Description

A cozy twist on the classic Caprese, this cheesy chicken casserole brings together juicy tomatoes, creamy mozzarella, fresh basil, and tender chicken in one deliciously baked dish.


Ingredients

  • 3 cups cooked chicken, shredded or cubed
  • 2 cups cherry tomatoes, halved
  • 1 cup fresh basil leaves, torn
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • 3 cups cooked pasta (penne or fusilli, optional)


Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch casserole dish.
  2. In a bowl, toss the cooked chicken with olive oil, minced garlic, salt, and pepper.
  3. Spread half of the cherry tomatoes on the bottom of the baking dish. Add the seasoned chicken on top.
  4. Layer the remaining tomatoes over the chicken, then sprinkle with mozzarella and parmesan cheese.
  5. Add the torn basil leaves across the top.
  6. Cover with foil and bake for 20 minutes. Remove foil and bake for another 10 minutes, until golden and bubbly.
  7. Let the casserole rest for 10 minutes before serving.
  8. Optional: Drizzle with balsamic glaze and garnish with extra basil before serving.
