- 4 medium russet potatoes, peeled and diced
- 1 large yellow onion, diced
- 2 celery stalks, chopped
- 4 garlic cloves, minced
- 2 tablespoons olive oil
- 2 tablespoons all-purpose flour
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 teaspoons paprika
- 1/4 teaspoon cayenne pepper (or more to taste)
- 1 1/2 teaspoons salt
- 1 teaspoon black pepper
Instructions
- Place your soup pot on the stove over medium heat and let it warm up while you prep your ingredients.
- Drizzle olive oil into the pot, then add onion, garlic, and celery. Sauté for about 5 minutes until soft and fragrant. Stir in paprika, cayenne, salt, and pepper.
- Sprinkle flour into the pot and stir constantly for 1 to 2 minutes to coat the vegetables.
- Slowly pour in the vegetable broth while stirring. Add the diced potatoes and bring everything to a simmer.
- Simmer uncovered for 25 to 30 minutes until potatoes are tender and the soup thickens slightly.
- Remove from heat and gently stir in the heavy cream. Taste and adjust seasoning if needed.
- Ladle into bowls and garnish with fresh parsley, extra cracked pepper, or a drizzle of cream. Serve hot.
