- 1 lb potatoes, peeled and diced
- 2 tablespoons olive oil
- 1/2 lb sausage (such as Andouille or your choice), crumbled
- 1/2 cup shredded cheddar cheese
- 1 tablespoon Cajun seasoning
- Salt and pepper to taste
- 1 sheet puff pastry or pie dough, thawed
- 1 egg, beaten (for egg wash)
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Boil the diced potatoes in salted water for about 10 minutes or until tender. Drain and set aside.
- In a pan, heat olive oil over medium heat and cook the sausage until browned and cooked through, breaking it into small pieces.
- Add the boiled potatoes to the pan with the sausage and stir in Cajun seasoning, salt, and pepper. Cook for another 5 minutes to blend the flavors.
- Remove the mixture from heat and stir in the shredded cheddar cheese until melted and combined. Let the mixture cool slightly.
- Roll out the puff pastry or pie dough and cut into 4-6 squares or circles, depending on your preferred pie size.
- Place a spoonful of the sausage-potato mixture in the center of each pastry piece, then fold over and seal the edges by pressing with a fork.
- Brush the tops with the beaten egg for a golden finish.
- Bake for 20-25 minutes or until the hand pies are golden brown and crispy.
- Allow to cool slightly before serving. Enjoy!
Notes
- For extra heat, add a pinch of cayenne pepper to the filling mixture.
- These hand pies can be frozen before baking and baked straight from the freezer when ready to eat.
- Try using different cheeses such as pepper jack for an extra spicy twist.
