Description

Savory hand pies filled with spicy Cajun-seasoned potatoes, melted cheddar cheese, and sausage, all wrapped in a crispy, flaky pastry crust—perfect for a satisfying snack or meal.


Ingredients

  • 1 lb potatoes, peeled and diced
  • 2 tablespoons olive oil
  • 1/2 lb sausage (such as Andouille or your choice), crumbled
  • 1/2 cup shredded cheddar cheese
  • 1 tablespoon Cajun seasoning
  • Salt and pepper to taste
  • 1 sheet puff pastry or pie dough, thawed
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Boil the diced potatoes in salted water for about 10 minutes or until tender. Drain and set aside.
  3. In a pan, heat olive oil over medium heat and cook the sausage until browned and cooked through, breaking it into small pieces.
  4. Add the boiled potatoes to the pan with the sausage and stir in Cajun seasoning, salt, and pepper. Cook for another 5 minutes to blend the flavors.
  5. Remove the mixture from heat and stir in the shredded cheddar cheese until melted and combined. Let the mixture cool slightly.
  6. Roll out the puff pastry or pie dough and cut into 4-6 squares or circles, depending on your preferred pie size.
  7. Place a spoonful of the sausage-potato mixture in the center of each pastry piece, then fold over and seal the edges by pressing with a fork.
  8. Brush the tops with the beaten egg for a golden finish.
  9. Bake for 20-25 minutes or until the hand pies are golden brown and crispy.
  10. Allow to cool slightly before serving. Enjoy!

Notes

  • For extra heat, add a pinch of cayenne pepper to the filling mixture.
  • These hand pies can be frozen before baking and baked straight from the freezer when ready to eat.
  • Try using different cheeses such as pepper jack for an extra spicy twist.
