Ingredients

  • 1.5 pounds boneless skinless chicken thighs, cut into bite sized pieces
  • 1 large red bell pepper, sliced into thin strips
  • 1 large yellow bell pepper, sliced into thin strips
  • 1 large green bell pepper, sliced into thin strips
  • 1 medium yellow onion, sliced
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  1. Heat a large skillet over medium high heat for 1 to 2 minutes.
  2. In a bowl, toss the chicken pieces with Cajun seasoning, garlic powder, paprika, salt, and black pepper until evenly coated.
  3. Add olive oil to the hot skillet and swirl to coat the bottom.
  4. Add the chicken in a single layer and cook undisturbed for 3 to 4 minutes to start browning.
  5. Stir and continue cooking for 3 to 4 minutes, until the chicken is mostly cooked through.
  6. Add the sliced bell peppers and onion. Cook, stirring occasionally, for 8 to 10 minutes until the vegetables are tender and the chicken is fully cooked.
  7. Taste and adjust seasoning if needed, then cook 1 more minute so everything blends together.
  8. Serve hot straight from the skillet.

Notes

  • For the best sear, avoid overcrowding the pan. If your skillet is small, cook the chicken in two batches.
  • Slice the peppers evenly so they soften at the same pace and still keep a little bite.
  • If your Cajun seasoning is salty, start with the listed salt amount and adjust at the end.
