- 2 medium lobster tails, cooked and chopped
- 300 grams spaghetti or linguine
- 200 grams cherry tomatoes, halved
- 3 tablespoons butter
- 3 garlic cloves, minced
- 2 tablespoons olive oil
- 2 tablespoons fresh parsley, chopped
- 1 whole lemon, juiced
- 1 teaspoon salt, or to taste
- 1/2 teaspoon black pepper
Instructions
- Bring a large pot of salted water to a boil.
- Cook the pasta according to package instructions until al dente, then reserve 1/2 cup pasta water.
- Heat olive oil and butter in a skillet over medium heat until melted.
- Add minced garlic and cook briefly until fragrant, then add cherry tomatoes and cook until slightly softened.
- Add lobster pieces and gently warm through.
- Add cooked pasta and a splash of reserved pasta water, then toss until evenly coated.
- Stir in lemon juice, parsley, salt, and black pepper, adjusting seasoning as needed.
- Serve immediately while warm.
