Ingredients

  • 2 medium lobster tails, cooked and chopped
  • 300 grams spaghetti or linguine
  • 200 grams cherry tomatoes, halved
  • 3 tablespoons butter
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley, chopped
  • 1 whole lemon, juiced
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper


Instructions

  1. Bring a large pot of salted water to a boil.
  2. Cook the pasta according to package instructions until al dente, then reserve 1/2 cup pasta water.
  3. Heat olive oil and butter in a skillet over medium heat until melted.
  4. Add minced garlic and cook briefly until fragrant, then add cherry tomatoes and cook until slightly softened.
  5. Add lobster pieces and gently warm through.
  6. Add cooked pasta and a splash of reserved pasta water, then toss until evenly coated.
  7. Stir in lemon juice, parsley, salt, and black pepper, adjusting seasoning as needed.
  8. Serve immediately while warm.
