Description

This Butter Bean and Kale Stew is a hearty, smoky, and comforting one-pot meal packed with protein-rich beans, tender vegetables, and nutrient-dense kale. A touch of paprika, cumin, and oregano brings warmth, while fresh parsley and grated cheese finish it off with a cozy, rustic touch.


Ingredients

  • 2 tbsp oil
  • 1 onion, diced
  • 1 carrot, diced or grated
  • 3 cloves garlic, minced
  • 1 (570g) jar butter beans, with stock
  • 1.5 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp red pepper flakes
  • 1 tbsp tomato paste
  • 400g tinned chopped tomatoes
  • 200ml vegetable stock
  • Salt and pepper, to taste
  • 20g hard cheese, grated
  • 2 cups kale, chopped and stems removed
  • Fresh parsley, to garnish


Instructions

  1. Heat oil in a large pot over medium heat. Sauté the onion and carrot for 5–6 minutes, until softened.
  2. Add garlic and cook for another 1–2 minutes until fragrant.
  3. Stir in smoked paprika, cumin, oregano, and red pepper flakes, cooking for 1 minute to toast the spices.
  4. Mix in tomato paste, chopped tomatoes, butter beans (with their stock), and vegetable stock. Stir well.
  5. Season with salt and pepper to taste, then bring to a simmer. Let cook for 15–20 minutes, stirring occasionally, until the stew thickens slightly.
  6. Add chopped kale and cook for 5 minutes, until wilted and tender.
  7. Serve hot, sprinkled with grated hard cheese and fresh parsley.

Notes

  • For a creamier texture, lightly mash some of the butter beans before adding the kale.
  • This stew pairs beautifully with crusty bread for dipping.
  • You can make it vegan by omitting the cheese or swapping in a dairy-free alternative.
